Homemade Protein Bars
I’ve been hitting the gym at 5 am which a) doesn’t leave room for making my favorite breakfast smoothies since I go straight to work afterwards and b) makes me ravenous and in need of protein shortly after a work out. That’s where Julie’s TVP (textured vegetable protein) Bars come in.
My friend, Julie, gave me the following template for a recipe:
- 2 cups of TVP (can be found in bulk at Whole Foods)
- 3 ripe mashed bananas OR pumpkin puree OR apple sauce OR yogurt (any sort of healthy semi-solid)
- Seasonings: pumpkin pie spice OR flax seed OR acai powder OR cinnamon
- Additional yummy things: Nuts OR seeds OR dried fruit OR nut butter OR coconut OR chocolate
Mix your combination of chosen ingredients together (consistency should be such that you can’t pour it out of a bowl but that it’s not dry and crumbly), press into an 8×8 pan and bake at 300 for 20 to 25 minutes. When the bars cool, cut them up, wrap them in plastic wrap and stick them in the freezer until you’re ready to go!
