A-Basin, The Rockies, and Easy Oatmeal
Ok, so life is still kicking my butt with long hours, high stress, and low resources. In the midst of wedding planning, trying to buy a house, working full time, and wrapping up a doctorate I was able to do a few fun things the last month:
We went to our first Rockies game!
The stadium doesn’t have anything on PNC park, but what a fun way to spend an early spring day.
I went to A-Basin for the first time!
I had my first day off of 2013 and one of my best friends from Pittsburgh was in town so we made it out for some spring skiing.
I found the easiest breakfast recipe ever
This recipe for blueberry coconut steel cut oatmeal is awesome and so easy. I have a new PA student every month and I like to bake something on their last day. With this recipe, all you do is put everything in a casserole dish, bake it the night before, and then put it in the oven to warm while you’re getting ready in the morning. Super easy, vegan, gluten free, and no fewer than 6 colleagues asked for the recipe.
I can’t wait until September when my internship, doctorate, and the wedding will be wrapped up. Maybe, just maybe, I’ll be able to come up for air. What tricks have you learned for keeping life going when you’re slammed?
