Pomegranate Pot Roast
My old GOTR co-coach asked me for a pomegranate pot roast recipe I had raved about. After looking for it for way too long on the internet I found it on this weird 8.5×11 thing in my kitchen. It was white and flat and had black letters on it telling me how to make an amazing pot roast. I thought I should make the recipe electronic. I also think I should make the pot roast this week because it is so totally amazing and easy I can’t believe I forgot about it! And it looks as though pomegranates have some potential health benefits.
Pomegranate Pot Roast
1-2 lb pot roast
1 qt beef broth
1 pt pomegranate juice
1 8 oz can tomato sauce
1 16 oz package dried fruit, chopped (I remember using apricots, golden raisens and cranberries but I’m sure any combo will work)
1 onion, chopped
4 carrots, chopped
4 celery stalks, chopped
Sear pot roast in a skillet until brown on all sides. Add everything to a crock pot and cook all day. Enjoy the smell of a cooking roast for as long as you can tolerate until you finally give in and eat it. Yummy, healthy and easy!
