Watermelon Gazpacho
I made it. It’s yummy. I’m sharing the recipe with you. You are welcome.
I modified the recipe from this site, and it seemed pretty resilient to change, so go ahead- tinker with it, try it and let me know how it turns out.
Watermelon Gazpacho
1 watermelon, cut into pieces
1 large tomato, quartered
1/2 sweet onion (I used Vidalia), roughly diced
1 small cucumber, roughly diced
1 red pepper, quartered
1 heaping scoop of paprika
2 cloves of garlic
1/2 cup of almonds
Throw everything into a blender (have I told you how much I love my Vitamix?!) and blend until smooth. I had to do it in two batches but the two batches mixed easily. I already had the watermelon in chunks so throwing everything together took no more than 6 minutes. Ta-da!
It’s simultaneously refreshing and smokey. It’s not dense and will not suffice for a meal but it is super quick and easy and great for summer hosting!
