Fast, easy breakfast with the perfect poached egg
The other day I saw this completely amazing video about the best way to poach an egg:
I’ve tried to make poached eggs dozens of times and with marginal success. Are the poached? Yes. Are they ugly enough I’d never serve them to a guest? Regrettably, also yes.
I had to try to make these eggs. I love poached eggs and toast so I toasted some bread then realized that we had some red kale that would sauté nicely with onions, garlic, and balsamic vinegar. Given that I had just done a crazy strength workout I also added some sliced avocado. Guess what? It was amazing! By far the easiest poached egg I’ve made and also beautiful enough to serve to guests!
The bad news? There are going to be far fewer poached eggs in my future: The Boy has requested that we try going vegan for weekdays for one month. We eat a lot of animal protein and I am a sucker for cheese and chocolate so it’s going to be a big change, but I’ll hold out for weekends when I can enjoy the perfect poached egg.
